This recipe is surprisingly good! Make sure to make enough for the whole family that will be asking for second servings.
INGREDIENTS
8 medium potatoes, sliced
1/2 pound sliced bacon
1 pound processed American cheese, sliced
1/2 onion, chopped
1 cup mayonnaise
salt and pepper to taste
1/4 cup black olives, sliced
DIRECTIONS
Cover the sliced potatoes with water into a large pot. Cook until boiling or for about 10 minutes. Drain the liquids and set aside.
Brown bacon in a large deep skillet set over medium-high heat. Transfer onto paper towels to drain.
Mix potatoes, cheese, onion, mayonnaise, salt and pepper into a large bowl. Transfer mixture in a 9 x 13-inch buttered baking dish. Crumble bacon over the mixture and sprinkle with olives.
Bake in a 325 degrees F (165 degrees C) preheated oven for 60 minutes or until golden brown.
Makes 12 servings
