Here’s a great idea for a delicious salad to serve when the friends come over for a visit. It should be prepared ahead of time to allow the flavors to blend well.
INGREDIENTS
2 handfuls of black beans, cleaned, soaked and cooked for 8 hours
1 bag frozen corn
1 medium onion
1 red bell pepper
5 cloves garlic
1/4 c. fresh cilantro
1/4 t. salt
juice of one lemon, one lime, one orange
DIRECTIONS
At 350 degrees F, roast the pepper and garlic for half hour. Put the pepper in a paper bag to steam for about 20 minutes. Peel pepper and squeeze out garlic from its skin.
Drain beans and mix it with the cooked corn, chopped onion, cut up pepper, chopped roasted garlic and cut up cilantro. Season with salt and juices according to taste. Leave it to rest overnight.
