This makes a great side dish recipe for your weekday meals and elegant enough to serve for any special gatherings.
INGREDIENTS
1 can (19 oz.) cannellini or navy beans, drained
1 1/2 cups cooked and cooled wild rice
1 cup chopped red bell pepper
1/4 cup sliced scallion, both white and green parts
2 Tbs. cider vinegar
2 Tbs. lemon juice
4 tsp. spicy brown mustard
1 1/2 Tbs. water
1 clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
DIRECTIONS
Toss beans with wild rice, red bell pepper and scallion in a large bowl.
Combine the rest of the ingredients together in a small bowl. Top this over wild rice mixture and toss lightly just until combined.
