If you’re tired of the traditional rice or pasta salad, this recipe would be a refreshing treat. It contains mint, almonds and oranges which adds new sets of flavor for your taste buds.
INGREDIENTS
* 600 ml (1 pint) of water
* 5 oz (140 g) of bulgur wheat
* 2 oranges
* 1 green pepper
* ½ cucumber
* 1½ oz (40 g) of toasted flaked almonds
* ½ oz (15 g) of freshly chopped mint
* juice and rind of 1 lemon
* salt and pepper
DIRECTIONS
In a saucepan, place the bulgur wheat and add water. Let it come to a boil and cover using lid. Lower heat to allow simmering. Let it cook for about 15 minutes. Drain off excess liquids and transfer the mixture in a bowl.
Wash and dice cucumbers. Remove pepper seeds and chop into small portions. Combine the pepper and cucumber with the bulgur wheat. Add the chopped mint and almonds.
Add the lemon juice and grated lemon zest. Mix them thoroughly using a spoon. Cut the rind off the oranges together with the pith using a sharp knife. Divide the segments and cut it in half. Add this to the wheat mixture and add some salt together with pepper. Combine well and serve.
