    INGREDIENTS

    2 1/2 cups water
    1 teaspoon salt
    1 teaspoon salad oil, butter, or margarine
    1 cup long grain rice

    DIRECTIONS

    • Put all the ingredients in a 2-qt casserole. Mix and cover. Set microwave to high heat for 5 minutes. Adjust setting to medium low and continue cooking for about 12 minutes.

    3/4 cup wild rice, uncooked
    1/2 cup pearl barley, uncooked
    1/2 pound smoked turkey breast, diced
    2 cups diced Red Delicious apple
    3/4 cup sliced green onions
    3/4 cup diced celery
    1/4 cup plus 1 tablespoon cider vinegar
    1/4 cup frozen apple juice concentrate, thawed and undiluted
    1 tablespoon olive oil
    1 tablespoon Dijon mustard
    1 teaspoon dried thyme
    1/2 teaspoon freshly ground pepper
    12 red leaf lettuce leaves
