INGREDIENTS
2 (15 ounce) cans black beans, rinsed and drained
2 tomatoes, finely chopped
3 serrano chile peppers, seeded and chopped
1 red bell pepper, seeded and chopped
1/4 cup white wine vinegar
2 tablespoons vegetable oil
1/2 teaspoon salt
DIRECTIONS
Combine the black beans, tomatoes, chilies, bell pepper, vinegar, oil and salt. Refrigerate for an hour and serve.
Makes 5 cups
