This recipe is a refreshing treat made possible with the use of orange. For a crunchy texture, pepper and green beans are added.
INGREDIENTS
* 4 oz (115 g) of cracked wheat
* 4 oz (115 g) of green beans, ends removed
* 1 fennel bulb, finely chopped
* 1 orange
* ½ red pepper, deseeded and finely chopped
* 1 crushed clove of garlic
* 3 tbsp of olive oil
* 1 tbsp of white wine vinegar
* salt and pepper
DIRECTIONS
In a mixing bowl, place the cracked wheat and cover it with boiling water. Soak for about 15 minutes and make sure to stir every 5 minutes. Drain all the liquids off wheat once it has doubled and put the wheat back into the bowl.
Meanwhile, blanch the green beans in a saucepan for about a minutes. Drain and use cold water for rinsing. Add beans and chopped fennel with the cracked wheat.
Grate the orange rind and place it in a small bowl. Reserve for later use. Peel off the orange and cut into segments. Add it to the bowl of wheat mixture. Blend well.
Use a small bowl to mix the crushed garlic with the grated orange zest, olive oil, vinegar, salt and pepper. Top over salad and mix thoroughly. Place it in the refrigerator for about 2 hours prior to serving. Use chopped pepper over salad and serve.
