Liven up your gloomy winter days with a festive serving of this delicious salad recipe.
INGREDIENTS
1 pound fresh green beans, trimmed
1/2 cup thinly sliced red onion
1 pint grape or cherry tomatoes, halved
2 tablespoons lemon juice
1 tablespoon olive or canola oil
1 tablespoon water
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup chopped celery
DIRECTIONS
Boil beans in a saucepan with water. Cook uncovered for about 10 minutes. Drain and use cold water to rinse. Transfer beans in a large bowl and add onion.
In a separate bowl, place the tomatoes.
Use a small bowl to combine lemon juice, oil, water, salt and pepper. Pour mixture over the vegetables, tossing until coated. Chill covered for an hour or longer.
Combine celery with the bean mixture. Place on a serving platter and surround with tomatoes.
