    Green Bean Egg Salad

    It’s good to serve variety of salad from time to time. This one is a real treat that you would surely love.

    INGREDIENTS

    1 pound fresh green beans, cut into 1 1/2 inch pieces
    3 hard-cooked eggs, chopped
    1/2 cup chopped sweet onion
    3/4 cup mayonnaise
    3/4 teaspoon prepared mustard
    3/4 teaspoon salt
    1/8 teaspoon pepper

    DIRECTIONS

    • Arrange the beans in a steamer basket and fill a large saucepan with an inch of water. Boil and cover. Steam beans for about 10 minutes or until crisp-tender. Cool the beans in a bowl and add eggs then onion.
    • Mix mayonnaise, mustard, salt and pepper. Combine this thoroughly into the bean mixture. Cover and chill for 2 hours or preferably longer. Serve.
