A real treat for a hungry crowd. Takes less than 10 minutes to prepare too!
INGREDIENTS
1 cup dry small shell pasta, cooked and cooled
1 (15-ounce) can mixed beans
1/2 cup green bell peppers, chopped
1/2 cup red bell peppers, chopped
1/4 cup diced red onion
Dressing:
3 tablespoons lemon juice
3 tablespoons olive oil
1-1/2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
Combine pasta with beans, green bell pepper, red bell pepper and onion.
Prepare the dressing in a jar with a tight fitting lid. Combine the dressing ingredients, shaking thoroughly until blended.
Add the dressing over salad and toss to combine.
Cover and place it in the refrigerator for at least an hour.
Makes 4 to 6 servings.
