This is a classic Greek flavored salad with green lentils, olive oil and feta cheese.
INGREDIENTS
2 c. cooked green lentils
2 tbsp. lime juice
1 tbsp. minced fresh mint
2 tsp. olive oil
1/4 tsp. salt
pinch fresh black pepper
2 tbsp. crumbled feta cheese
DIRECTIONS
Add all the ingredients into a bowl but not including feta. Leave it for 30 minutes to marinate at room temperature. Add feta prior to serving.
Makes 4 to 6 servings.
