2 cups water
1 cup uncooked oat groats
1 cup chopped seeded cucumber
3/4 cup chopped fresh parsley
1/2 cup chopped red onion
1/2 cup finely chopped celery
1/2 cup chopped fresh mint
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
1 garlic clove, minced
1/2 teaspoon salt
1 (4-ounce) package crumbled feta cheese with basil and sun-dried tomatoes
DIRECTIONS
Boil water in a medium saucepan. Mix in groats and boil again. Adjust heat to low and cover the pan. Let it simmer for about 26 minutes. Drain and rise under cold running water. Drain well.
Transfer groats in a bowl and combine it with the rest of the ingredients except for the feta cheese. Cover and keep refrigerated for 3 hours. Add feta cheese and gently toss prior to serving.
