This delicious salad recipe can also be used as a wrap filling. Great for snacks at work!
INGREDIENTS
1/2 cup basmati rice
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons vinegar (white, apple, or red)
1 1/2 teaspoons cumin
1 garlic clove, crushed/minced
1 teaspoon salt
1/4 tablespoon black pepper
1 (15 ounce) can black beans, drained and rinsed
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1/2 cup cooked corn
DIRECTIONS
Prepare and cook rice as directed in the package.
Meanwhile, stir oil with lemon juice, vinegar, salt, black pepper, garlic and cumin. Stir well until combined. Add black beans, green pepper, onion and corn.
Add mixture to cooked rice and combine well. Chill until serving.
Makes 6 to 8 servings.
