There are so many ways to experiment with summer pasta salad ad they are so easy to prepare and cook as well. Perfect for any potluck parties and even weekend barbecues.
INGREDIENTS
* 3 cups rotelle pasta
* 5 large tomatoes, chopped
* 1 red bell pepper, chopped
* 2 green bell peppers, chopped
* 1 teaspoon dried parsley
* 2 tablespoons chili powder
* ¼ cup extra virgin olive oil
* 1/4 cup red wine vinegar
* 1 cup shredded mozzarella cheese
* Salt and pepper to taste
DIRECTIONS
Boil salted water in a large cooking pot. Add pasta, cooking for about 10 minutes. Drain and set aside.
In a mixing bowl, combine olive oil, red wine vinegar, parsley and chili powder. Add tomatoes, red pepper and green pepper. Mix well using a spatula, making sure that the veggies are properly coated in oil mixture.
Add cooked pasta into the mixture along with shredded cheese. Toss and chill. Serve.
