This combines sweet potatoes and potatoes for a truly one of a kind salad experience.
INGREDIENTS
2 potatoes
1 sweet potato
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 cup mayonnaise
1 tablespoon prepared mustard
1 teaspoon salt
1 1/2 teaspoons ground black pepper
DIRECTIONS
Add potatoes in a large pot of boiling salted water. Cook for 30 minutes, drain and cool. Peel cooled potatoes, chop and set aside.
Cover eggs with cold water in a saucepan. Cook until boiling and cover. Remove from heat and leave eggs to stand for 12 minutes. Drain and cool the eggs before peeling and chopping.
Mix potatoes, eggs, celery and onion. Stir in mayonnaise, mustard, salt and pepper then combine with the potato mixture. Toss until properly coated. Chill and serve.
Makes 8 servings
