This is one popular recipe for my family. Feel free to toss in meslun lettuce and apples for a added twist.
INGREDIENTS
3 tablespoons orange juice concentrate
2 tablespoons sugar
2 tablespoons cider vinegar
1 1/2 teaspoons chopped onion
1/4 teaspoon salt
1/2 cup vegetable oil
1 1/2 teaspoons poppy seeds
1 (10 ounce) package fresh baby spinach
1 (15 ounce) can mandarin oranges, drained
2/3 cup slivered almonds, toasted
DIRECTIONS
Pour orange juice concentrate, sugar, vinegar, onion and salt into a blender. Add oil in a slow steady stream, keeping the motor running. Mix in the poppy seeds then transfer mixture into a small pitcher or bowl.
Place the pitcher or bowl in the refrigerator for an hour.
Line salad plates with spinach, mandarin oranges and almonds. Moisten with dressing and serve.
