Though this may sound too familiar, it’s nothing like the traditional ones I’ve tried before. Turn it into a complete meal by serving it up with some Spanish rice.
INGREDIENTS
1 (15 ounce) can black eyed peas, drained and washed
2 medium tomatoes, chopped
1 yellow pepper, chopped
4 green onions, chopped
1/2 cup salsa
1/2 teaspoon garlic powder
2 tablespoons cilantro, chopped
several dashes cayenne, to taste
salt and pepper, to taste
DIRECTIONS
Place beans in a bowl. Add the veggies and combine well.
Add seasonings according to taste and salsa. Place it in the refrigerator, serving chilled.
Makes 2 servings.
