You’ll love this bacon flavored salad dish that is made rich with ranch dressing. It’s a real must-try recipe!
INGREDIENTS 1 (1 ounce) package ranch dressing mix
2 cups mayonnaise
3/4 cup chopped green onion
1 pound bacon slices
5 pounds unpeeled red potatoes
DIRECTIONS
Add potatoes in a large pot of boiling salted water. Cook for 30 minutes, drain and cool. Peel cooled potatoes, chop into inch sized portions and place in a large serving bowl. Refrigerate for at least 2 hours.
Mix the ranch dressing mix, mayonnaise and green onion into a small bowl. Cover and chill for at least 2 hours, allowing the flavors to blend.
Use paper towels to wrap the bacon and set on a plate. Microwave for 15 minutes or until crisp. Cool when done.
Combine the mayonnaise mixture into the bowl of potatoes. Crumble bacon into the bowl, stirring for proper blending.
