This delicious salad recipe can make a healthy side dish serving anytime of the day.

INGREDIENTS
6 cups water
3/4 cup wild rice, uncooked
1/2 cup pearl barley, uncooked
1/2 pound smoked turkey breast, diced
2 cups diced Red Delicious apple
3/4 cup sliced green onions
3/4 cup diced celery
1/4 cup plus 1 tablespoon cider vinegar
1/4 cup frozen apple juice concentrate, thawed and undiluted
1 tablespoon olive oil
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1/2 teaspoon freshly ground pepper
12 red leaf lettuce leaves |

DIRECTIONS
- In a large saucepan, combine water, wild rice and barley. Cook until boiling. Adjust heat to low and cover pan. Simmer for about 45 minutes. Drain the liquids when done.
- Add turkey to drained mixture and add the apples, onion and celery. Toss to combine.
- In a separate bowl, stir together vinegar, apple juice concentrate, olive oil, Dijon mustard, dried thyme and freshly ground pepper. Add mixture over rice and toss until combined. Cover and refrigerate for about 3 hours, stirring every half hour.
- For serving, arrange 2 lettuce leaves each on 6 individual plates. Add rice mixture and serve.
