Healthy and delicious is a great combination that best describes this recipe.
INGREDIENTS
2 cups elbow macaroni or tri-color rotini
1/2 cup diced celery
1/2 cup diced green peppers
1/2 cup shredded carrots
1/4 cup finely chopped onion
2/3 cup mayonnaise
1 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
baby salad greens
1 cucumber
1 whole carrot
4 radishes
DIRECTIONS
Refer to package instruction for pasta cooking. Drain pasta and toss lightly with the rest of the ingredients except for the salad greens, cucumber, radishes and whole carrot. Chill until serving.
For serving, top mixture over baby salad greens.
