A perfect and very healthy salad for outdoor gatherings!
INGREDIENTS
4 slices Roman Meal Bread
3 tablespoons olive oil, divided
2 tablespoons Parmesan cheese, shaved or grated
3 cups cherry tomatoes, sliced in half
2 cups cucumbers, seeded and diced
1 cup chickpeas, rinsed and drained
1/2 cup red onion, finely sliced
1/3 cup red wine vinegar
1/4 cup fresh basil leaves
DIRECTIONS
Prepare broiler to 400 degrees F. Arrange a line of foil over a baking sheet.
Brush bread evenly with a tablespoon of olive oil. Arrange over a baking sheet. Place it into the broiler and cook for about one minute for each side.
Remove from oven when done and top one side with cheese. Put it back into the oven and cook for another 20 seconds or just until the cheese melts. Cool and cut into inch slices.
In a large serving bowl, mix together the tomatoes, cucumbers, onion, vinegar, basil and the remaining olive oil. Add salt and pepper according to taste and serve with bread pieces on top.
